Moist Apple Cinnamon Coconut Cake

1 1/2 cup sugar
2 teaspoons vanilla 
6 oz softened cream cheese
2 eggs
1 1/2 cup flour
1 1/2 teaspoon baking powder
3 teaspoons ground cinnamon
1/8 teaspoon sea salt
3 cups chopped apples

Preheat oven to 350 degrees.  Beat the coconut oil, sugar, vanilla, cream cheese and eggs with a mixer in a large bowl.  Add the flour, baking powder, cinnamon, salt and mix til well blended.  Stir in the chopped apples.  Pour batter into a greased 9 inch springform pan.  Sprinkle top with a little cinnamon and sugar.  Bake on 350 for 1 hour and 10 minutes until the cake pulls away from the sides of the pan.  Cool completely on a wire rack and then remove from springform pan.
